Eichstadt is an 18-under quarter horse world champion. She earned that in 2011. Last year, Eichstadt finished as runner up. “You have to set your sights on…for me what I do is to remember the great things,” says Eichstadt. ”I remember winning worlds. I remember winning my bigger shows and each accomplishment and how good it feels. That motivates me to work towards achieving that memory again.”
Currently, she is leading the nation in three separate classes. She is also a state champion gymnast, winning the floor routine.
At only 16 years old, Eichstadt is class valedictorian and is hoping to one day be a neurosurgeon. “I know all these people behind me are the best of the best and to be student athlete of the year is amazing,” concluded Eichstadt.
